An all purpose baking mix is a great time saver! It cuts your baking time down, plus it only takes 5 minutes to put together.
Here is a healthy-ish vegan recipe! I like to use it for pancakes and my chocolate cake for one recipe! The uses are endless!
All- Purpose Baking Mix
- 6 cups flour
- 3 tablespoons baking powder*
- 1 tablespoon salt
- 1 cup vegetable shortening**
Add ingredients into a large bowl and use a pastry cutter to mix throughly. Store in an airtight glass jar. While this is stable outside of your fridge, I do store mine in the fridge. It will last about 3 months in the fridge.
* you can add more baking powder if you feel like you need to.
** shortening is not healthy to eat all the time. However, you can find healthier types of shortening that free from hexane, soy and canola. The brand that I like is sustainable, organic and fair trade. It’s not hydrogenated and has no trans fats.
Yes, it’s full of saturated fats but remember they are fats from plants. Not all saturated fats are equal; it depends on the length of the chain. Plant fats don’t act the same way as animal fats do in your body. Sure, saturated plant fats if eaten in excess will make you gain weight and raise your bad cholesterol but they also help to raise your good cholesterol and come with more nutrients than animal products.
Fat gets a bad reputation, your body needs fat to be healthy…just use the saturated fats sparingly. Keep those pancakes and chocolate cakes (that you can make with this mix) to an occasional treat…or to no more than once a week. If you’re eating a plant based diet which is free from bad fat, the occasional treat with saturated plant fat will be OKAY. IF you eat meat three times a day AND use shortening daily, then you’re asking for it…
