- Tortillas
- Spinach or other fresh greens
- “beef” seitan
- Spicy pineapple salsa
- BBQ sauce/seasoning
- Tablespoon of White vinegar
- Tablespoon of chopped red onion
- Cilantro
- Tablespoon of avocado oil
- Fresh cilantro
- Prepare pineapple salsa
- In a saucepan. Heat avocado oil, Carmalize onions.
- Add BBQ sauce/seasoning, vinegar to the pan. If using a seasoning packet, follow the directions.
- Add beef seitan to the pan and warm.
- Warm tortillas
- Assemble. I start with the seitan and top it with the spinach, then salsa. I finish with some fresh cilantro and a squeeze of lime juice.
